This easy rhubarb crisp is the perfect way to enjoy rhubarb’s bold, tangy flavor! With a sweet oat topping and just 10 minutes of prep, it’s a comforting dessert that tastes like home.
Ingredients
For the filling:
4 cups chopped rhubarb (5–6 stalks)
¾ cup sugar
1 tbsp cornstarch or flour
1 tsp vanilla extract
Pinch of salt
For the topping:
1 cup old-fashioned oats
½ cup flour
½ cup brown sugar
½ tsp cinnamon
⅓ cup melted butter
Instructions
Preheat oven to 375°F. Grease an 8×8″ baking dish.
Mix rhubarb, sugar, cornstarch, vanilla, and salt in a bowl. Let sit 10 minutes.
In another bowl, mix oats, flour, sugar, cinnamon, and butter until crumbly.
Pour rhubarb mixture into the dish. Sprinkle topping over it.
Bake 35–40 minutes until bubbly and golden.
Let cool slightly. Serve warm with ice cream!
Notes
You can mix in strawberries, apples, or blueberries.
Add chopped pecans or almonds to the topping for extra crunch.
Frozen rhubarb works too—use straight from the freezer.
