Description

This easy rhubarb crisp is the perfect way to enjoy rhubarb’s bold, tangy flavor! With a sweet oat topping and just 10 minutes of prep, it’s a comforting dessert that tastes like home.


Ingredients

For the filling:

  • 4 cups chopped rhubarb (56 stalks)

  • ¾ cup sugar

  • 1 tbsp cornstarch or flour

  • 1 tsp vanilla extract

  • Pinch of salt

For the topping:

  • 1 cup old-fashioned oats

  • ½ cup flour

  • ½ cup brown sugar

  • ½ tsp cinnamon

  • ⅓ cup melted butter


Instructions

  • Preheat oven to 375°F. Grease an 8×8″ baking dish.

  • Mix rhubarb, sugar, cornstarch, vanilla, and salt in a bowl. Let sit 10 minutes.

  • In another bowl, mix oats, flour, sugar, cinnamon, and butter until crumbly.

  • Pour rhubarb mixture into the dish. Sprinkle topping over it.

  • Bake 35–40 minutes until bubbly and golden.

 

  • Let cool slightly. Serve warm with ice cream!

Notes

  • You can mix in strawberries, apples, or blueberries.

  • Add chopped pecans or almonds to the topping for extra crunch.

  • Frozen rhubarb works too—use straight from the freezer.
