Description

This creamy, chocolatey mousse is made with a surprising base—cottage cheese! It’s a guilt-free dessert packed with protein, sweetened naturally with maple syrup, and made rich with dark chocolate. Whether you’re meal-prepping healthy treats or satisfying a chocolate craving, this no-bake recipe is a keeper.


Ingredients

  •  1 cup cottage cheese (full-fat for creamiest texture)

  • 1/2 cup dark chocolate chips (or chopped dark chocolate, 70%+

  • 2 tbsp maple syrup (or honey

  • 1 tbsp chia seeds (optional, for added texture)

  • Pinch of sea salt

  • Optional toppings: sliced berries, granola, whipped cream, or shaved chocolate


Instructions

  • Melt the chocolate
    In a microwave-safe bowl or over a double boiler, melt the chocolate until smooth. Let it cool slightly so it doesn’t seize in the blender.

  • Blend the cottage cheese
    Add the cottage cheese to a high-speed blender or food processor. Blend for 1–2 minutes until completely smooth and creamy.

  • Combine ingredients
    Pour in the melted chocolate, maple syrup, and sea salt. Blend again until the mixture is silky and well-combined.

  • Add chia seeds (optional)
    Stir in chia seeds by hand to preserve texture, or skip if you prefer it smooth.

 

  • Chill and serve
    Spoon the mousse into ramekins or jars. Cover and refrigerate for at least 1–2 hours. Top with your favorite garnishes before serving.

Notes

  • Blending tip: Use a high-powered blender to eliminate any graininess from the cottage cheese.

  • Make it dairy-free: Substitute cottage cheese with a thick plant-based yogurt or blended silken tofu.

  • Flavor ideas: Add 1/4 tsp cinnamon or a splash of vanilla for depth. A pinch of espresso powder makes the chocolate flavor even bolder.

  • Chilling matters: While the mousse can be eaten right away, chilling it improves the texture and makes it richer and more mousse-like.
