No-Bake Date Dessert Bites

Description

These fudgy date dessert bites taste like decadent chocolate truffles but are packed with fiber, antioxidants, and natural sweetness. Perfect for meal prep, post-workout fuel, or a guilt-free dessert fix!


Ingredients

1 cupMedjool dates (pitted) 
½ cupRaw almonds or walnuts 
2 tbspCocoa powder 
1 tspPure vanilla extract 
PinchSea salt


Instructions

  1. Blend nuts in food processor until finely chopped.

  2. Add dates, cocoa, vanilla, and salt. Process until sticky (~1 min).

  3. Roll into 1-inch balls (damp hands prevent sticking).

  4. Optional: Roll in shredded coconut or crushed pistachios.

  5. Chill 1 hour to firm up.

Notes

  • Too dry? Add 1 tsp nut butter or water.

  • Too sticky? Dust hands with cocoa powder.

  • Freezer-friendly: Store up to 3 months!
