Three layers, one square pan

These blueberry cream cheese bars have a shortbread-style base, a thin creamy middle and a loose layer of buttery crumbs. Fresh berries bake into the filling, leaving little purple pockets rather than a uniform fruit puree. Slice the chilled slab into 16 small squares for a dessert tray.

The crust and topping come from the same mixture. Reserving the crumble before pressing the base keeps the steps manageable and leaves enough loose crumbs to cover the berries without hiding them completely.

Ingredients and useful notes

Choose full-fat cream cheese in a block and soften it before mixing. Beating cold cheese with an egg can leave lumps that are difficult to smooth out without adding too much air. The filling needs only brief mixing once the egg is added.

Dry the blueberries well after washing. Surface water is extra moisture the filling does not need. This version is written for fresh berries; frozen berries can release more juice, so they are not presented as a tested one-for-one substitution.

A teaspoon of lemon zest brightens the filling without adding much liquid. Grate only the yellow surface. The white pith underneath can taste bitter, especially in a mild cream-cheese mixture.

Building the layers

Press two-thirds of the crumb mixture into an even base, working it right into the corners. The short initial bake helps the base hold together beneath the filling. Cool it briefly before adding the cheese mixture.

Scatter the berries and topping gently. Leaving small openings between the crumbs lets you see the fruit and helps you judge whether the filling is set. Pushing down on the topping would bury it in the cheese layer.

How to get clean slices

Check for lightly golden crumbs and a center that wobbles slightly as one piece, rather than rippling like liquid. A toothpick is less helpful in a bar with cream cheese and juicy berries. Pan material and ovens can change the final few minutes.

Chilling is essential for neat cuts. Lift the cold slab with the parchment handles, then use a sharp knife wiped clean between cuts. Cutting while warm can pull the creamy layer apart even when the bars have baked sufficiently.

Make-ahead serving and storage

Make the bars the day before serving so the filling has plenty of time to firm in the refrigerator. Keep them cold for transport and set out a small plate at a time. Return perishable leftovers to refrigeration within 2 hours, or within 1 hour above 90°F.

Store covered at 40°F or below for up to 3 days. For longer storage, wrap individual cold bars and freeze for up to 1 month for best quality. Thaw in the refrigerator; the berries may soften and release a little moisture after freezing.

Ingredients

Crust and crumble

  • 1 1/2 cups all-purpose flour 180 g
  • 1/2 cup granulated sugar 100 g
  • 1/4 tsp fine salt
  • 1/2 cup unsalted butter 113 g; melted and cooled slightly

Filling

  • 8 oz full-fat block cream cheese 226 g; softened
  • 1/3 cup granulated sugar 67 g
  • 1 large egg room temperature
  • 1 tsp vanilla extract
  • 1 tsp finely grated lemon zest
  • 1 1/2 cups fresh blueberries 225 g; washed and thoroughly dried
  • 1 tsp cornstarch

Instructions

  • Heat the oven to 350°F (175°C). Line an 8-inch square metal pan with parchment, leaving handles on two sides.
  • Stir the flour, sugar and salt together, then stir in the melted butter until moist crumbs form. Reserve one-third of the mixture, about 130 g, for the topping. Press the rest evenly and firmly over the pan bottom.

  • Bake the crust for 15 minutes, until the surface looks dry and the edges are just beginning to color. Place the pan on a rack for 10 minutes while leaving the oven on.
  • Beat the softened cream cheese and filling sugar until smooth. Mix in the egg, vanilla and lemon zest at low speed just until blended.

  • Spread the cream-cheese mixture over the warm crust. Toss the dry blueberries with the cornstarch, scatter them over the filling, and sprinkle the reserved crumble on top. Do not press the berries or crumble into the filling.

  • Bake for 30–35 minutes, until the crumble is lightly golden and the cream-cheese filling is set at the edges with only a slight wobble in the center. A wet, liquid ripple means it needs longer.
  • Cool on a rack for 50 minutes, then refrigerate for at least 4 hours. The additional-time allowance includes the 10-minute crust cool, 50-minute final cool and 4-hour chill. Keep refrigerated until firm enough to lift and cut into a 4-by-4 grid.
