Ingredients

  • 1/2 cup unsalted butter
  • 1 cup self-rising flour or gluten-free self-rising flour
  • 1 cup whole milk or milk of choice
  • 2 cups fresh or frozen blueberries
  • 3/4 cup sugar (divided, optional)

Equipment

  • 9x13-inch baking dish
  • mixing bowl
  • whisk
  • measuring cups

Method

  1. Preheat oven to 350°F (175°C). Place butter in a 9x13 inch baking dish and melt in the oven until fully melted and slightly foamy.
  2. In a bowl, whisk together flour, milk, and half of the sugar until a smooth batter forms.
  3. Pour the batter evenly over the melted butter in the baking dish without stirring.
  4. Toss blueberries with remaining sugar and scatter evenly over the batter. Do not stir.
  5. Bake for 38 to 45 minutes until the top is deep golden brown and the filling is bubbling.
  6. Remove from oven and let rest for 15 minutes before serving.

Notes

Do not stir the layers—this is key to achieving the cobbler texture. Use gluten-free self-rising flour for a gluten-free version. Let the cobbler rest at least 15 minutes before serving to allow the filling to thicken. Adjust sugar based on the sweetness of your blueberries.
