Method
- Peel, core, and slice the pineapple into even rings or spears, then pat dry thoroughly.
- In a bowl, whisk together rum, melted butter, brown sugar, cinnamon, ginger, and vanilla extract.
- Coat pineapple with marinade and let sit for at least 20 minutes.
- Preheat air fryer to 400°F for 3 minutes.
- Place pineapple in a single layer and cook for 6 minutes.
- Flip pineapple, brush with marinade, and cook another 4–5 minutes until caramelized.
- Simmer remaining marinade in a saucepan until thickened into a glaze.
- Serve pineapple warm with glaze, optionally over ice cream.
Notes
Use only fresh pineapple for proper caramelization. Always pat pineapple dry before marinating. Do not overcrowd the air fryer basket. Apply glaze during the final minutes to avoid burning. For a non-alcoholic version, substitute rum with pineapple juice and rum extract.
