Ingredients
  

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 cups diced apples
  • 1 cup chopped walnuts (optional)

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x9-inch baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  4. Gradually add dry ingredients to wet mixture and stir until combined.
  5. Fold in diced apples and walnuts (if using).
  6. Spread batter evenly into prepared baking pan.
  7. Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean. Cool completely before cutting into squares.

Notes

Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 5 days. Can be frozen for up to 2 months.
