Ingredients

  • 2 medium apples, peeled and diced (Honeycrisp or Granny Smith)
  • 2 tbsp brown sugar
  • 1/2 tsp ground cinnamon
  • 1 pinch ground nutmeg
  • 1 tsp lemon juice
  • 1 tsp cornstarch
  • 1/4 cup old-fashioned oats
  • 3 tbsp all-purpose flour
  • 3 tbsp brown sugar
  • 1 pinch ground cinnamon
  • 1 pinch salt
  • 3 tbsp cold unsalted butter, cubed
  • 2 tbsp chopped pecans (optional)

Instructions

  • Preheat oven to 375°F and set out two 6-ounce ramekins.
  • Toss diced apples with brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch until evenly coated.
  • Divide the apple mixture evenly between the two ramekins.
  • Mix oats, flour, brown sugar, cinnamon, and salt together in a separate bowl.
  • Cut the cold butter into the oat mixture until crumbly. Stir in the chopped pecans if using.
  • Sprinkle the topping evenly over the apples in each ramekin.
  • Bake for 22 to 25 minutes, until the topping is golden brown and the filling is bubbling.
  • Let rest for 5 minutes before serving.

Notes

Best served fresh, but leftovers keep covered in the refrigerator for up to 3 days. Reheat in a 350°F oven for about 10 minutes to crisp the topping before serving.
