Ingredients

  • 1 cup all-purpose flour
  • 1 1/2 tbsp granulated sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup nonfat milk
  • 1 egg, beaten
  • 1 cup apple, peeled, cored, and chopped
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 tsp lemon juice
  • 2 tsp powdered sugar, for topping

Instructions

  • In a bowl, whisk together flour, sugar, baking powder, and salt.
  • Stir in milk and beaten egg until just combined.
  • Fold in chopped apples, cinnamon, vanilla extract, and lemon juice.
  • Spray a nonstick skillet with cooking spray and heat over medium heat.
  • Drop batter by spoonfuls into the skillet and flatten slightly. Cook until golden brown on both sides.
  • Remove fritters to a plate and sprinkle with powdered sugar before serving.

Notes

Best served warm. Store leftovers in an airtight container at room temperature for 1–2 days or refrigerate for up to 4 days.
