Ingredients
  

  • 3 cups broccoli florets
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup almond flour or breadcrumbs
  • 1 large egg
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt

Method
 

  1. Preheat oven to 375°F and line baking sheet.
  2. Steam broccoli, chop finely, and squeeze dry.
  3. Mix all ingredients until combined.
  4. Roll into 1-inch balls and place on sheet.
  5. Bake 20–25 minutes until golden.
  6. Cool slightly before serving.

Notes

Squeeze broccoli very dry to avoid soggy balls. Chill mixture if sticky. Freeze after baking up to 3 months.
