Ingredients

  • 4 boneless pork chops (1-inch thick)
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp dried thyme
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 6 oz herb stuffing mix or cubed bread
  • 1 cup chicken broth, warmed
  • 4 tbsp butter, melted
  • 0.5 cup celery, finely diced
  • 0.5 cup yellow onion, finely diced
  • 2 tbsp fresh parsley, chopped
  • 0.5 tsp dried sage
  • 0.5 tsp dried thyme

Equipment

  • oven
  • 9x13-inch baking dish
  • skillet

Method

  1. Preheat oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
  2. Sauté celery and onion in butter over medium heat for 5 minutes until softened.
  3. In a large bowl, combine stuffing mix, sautéed vegetables, melted butter, warm chicken broth, parsley, sage, thyme, salt, and pepper. Mix until moistened.
  4. Season pork chops with salt, pepper, garlic powder, onion powder, and dried thyme on both sides.
  5. Heat olive oil in a skillet over medium-high heat. Sear pork chops for 2–3 minutes per side until golden brown.
  6. Arrange pork chops in the prepared baking dish and press stuffing evenly on top of each chop.
  7. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10–15 minutes until stuffing is golden and pork reaches 145°F internally.
  8. Let rest for 5 minutes before serving.

Notes

Searing the pork chops before baking locks in moisture and adds extra flavor. Use thick-cut chops and a meat thermometer for the juiciest results.
