- Preheat oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
- Sauté celery and onion in butter over medium heat for 5 minutes until softened.
- In a large bowl, combine stuffing mix, sautéed vegetables, melted butter, warm chicken broth, parsley, sage, thyme, salt, and pepper. Mix until moistened.
- Season pork chops with salt, pepper, garlic powder, onion powder, and dried thyme on both sides.
- Heat olive oil in a skillet over medium-high heat. Sear pork chops for 2–3 minutes per side until golden brown.
- Arrange pork chops in the prepared baking dish and press stuffing evenly on top of each chop.
- Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10–15 minutes until stuffing is golden and pork reaches 145°F internally.
- Let rest for 5 minutes before serving.
Notes
Searing the pork chops before baking locks in moisture and adds extra flavor. Use thick-cut chops and a meat thermometer for the juiciest results.
