Ingredients

  • 1 cup almond flour
  • 1/2 cup vanilla protein powder
  • 1/2 cup dried blueberries
  • 4 oz cream cheese, softened
  • 2 tbsp almond butter (or peanut butter)
  • 2 tbsp sweetener of choice (monk fruit, erythritol, or sugar)
  • 1 tsp vanilla extract
  • 1 tbsp milk (as needed to bind)

Instructions

  • In a mixing bowl, combine almond flour and vanilla protein powder.
  • Add softened cream cheese, almond butter, sweetener, and vanilla extract. Stir until a dough-like consistency forms.
  • Fold in dried blueberries. If the dough is too dry, add a splash of milk until it holds together.
  • Roll mixture into small balls (about 1 tablespoon each) and place on a parchment-lined tray.
  • Chill in the refrigerator for at least 30 minutes before serving.

Notes

Keep these protein balls stored in an airtight container in the refrigerator for up to one week. You can also freeze them for up to 3 months.
