Ingredients

  • 1 cup raw unsalted almonds or cashews
  • 1/2 cup raw unsalted walnuts
  • 3/4 cup dried cherries
  • 9 large Medjool dates, pitted
  • 2-3 tablespoons water or cherry juice
  • 1 tablespoon unsweetened cocoa powder
  • 1/8 teaspoon sea salt
  • 1/4 cup mini semi-sweet chocolate chips

Instructions

  • Pulse the almonds (or cashews) and walnuts in a food processor until finely chopped.
  • Add the dates, dried cherries, cocoa powder, and sea salt. Add 1 tablespoon of water or cherry juice and pulse until sticky, adding more liquid 1 tablespoon at a time if needed.
  • Transfer the mixture onto parchment paper or a cutting board and gently knead in the mini chocolate chips.
  • Scoop 1½–2 tablespoon portions, gently squeeze the mixture together, and roll into balls.
  • Store the energy bites in the refrigerator for 4–5 days. Enjoy chilled or allow them to come to room temperature before serving.

Notes

Use fresh, soft Medjool dates for the best texture. Add water or cherry juice gradually until the mixture becomes sticky enough to hold together. Cashews can replace almonds or walnuts, and a drizzle of honey may be added for extra sweetness if desired. Store refrigerated for 4–5 days or freeze for longer storage.
