Ingredients
  

  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 3 tbsp strawberry jam
  • 2 tbsp freeze-dried strawberries, crushed
  • pink food coloring (optional)
  • 1 cup dark or semi-sweet chocolate chips
  • 1 tbsp coconut oil or shortening

Method
 

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. Whisk together flour, baking soda, baking powder, and salt in a bowl.
  3. Cream butter and sugar until light and fluffy, about 3 minutes.
  4. Beat in egg, vanilla, strawberry jam, crushed freeze-dried strawberries, and food coloring if using.
  5. Gradually mix dry ingredients into wet ingredients just until combined.
  6. Scoop dough into 1½-tablespoon portions, roll into balls, and place 2 inches apart. Gently flatten.
  7. Bake for 10–12 minutes until edges are set but centers remain soft. Cool completely.
  8. Melt chocolate chips and coconut oil in the microwave until smooth, stirring every 30 seconds.
  9. Drizzle melted chocolate over cooled cookies and allow to set before serving.

Notes

Be sure cookies are completely cool before adding the chocolate drizzle to prevent melting. Freeze-dried strawberries provide the best concentrated strawberry flavor without excess moisture.
