- Preheat oven to 350°F and line baking sheets with parchment paper.
- Whisk together flour, baking soda, baking powder, and salt in a bowl.
- Cream butter and sugar until light and fluffy, about 3 minutes.
- Beat in egg, vanilla, strawberry jam, crushed freeze-dried strawberries, and food coloring if using.
- Gradually mix dry ingredients into wet ingredients just until combined.
- Scoop dough into 1½-tablespoon portions, roll into balls, and place 2 inches apart. Gently flatten.
- Bake for 10–12 minutes until edges are set but centers remain soft. Cool completely.
- Melt chocolate chips and coconut oil in the microwave until smooth, stirring every 30 seconds.
- Drizzle melted chocolate over cooled cookies and allow to set before serving.
Notes
Be sure cookies are completely cool before adding the chocolate drizzle to prevent melting. Freeze-dried strawberries provide the best concentrated strawberry flavor without excess moisture.
