Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 bell peppers, chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 4 cups beef broth
  • 1 cup cooked rice
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions

  • In a large pot, cook ground beef and onion over medium heat until beef is browned. Drain excess fat.
  • Add bell peppers and garlic. Cook for 3–4 minutes until softened.
  • Stir in diced tomatoes, tomato sauce, beef broth, oregano, basil, salt, and pepper. Bring to a boil.
  • Reduce heat and simmer for 30 minutes, stirring occasionally.
  • Stir in cooked rice just before serving.
  • Serve hot, garnished with fresh parsley if desired.

Notes

Use green, red, or yellow bell peppers for variety. Substitute ground turkey for a lighter version. Add extra broth if the soup thickens too much after sitting.
