Classic Stuffed Pepper Soup

This classic stuffed pepper soup is a hearty, comforting bowl filled with ground beef, bell peppers, tomatoes, and rice. It has all the flavors of traditional stuffed peppers in a simple, cozy soup.

Ingredients
  

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 bell peppers, chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 4 cups beef broth
  • 1 cup cooked rice
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. In a large pot, cook ground beef and onion over medium heat until beef is browned. Drain excess fat.
  2. Add bell peppers and garlic. Cook for 3–4 minutes until softened.
  3. Stir in diced tomatoes, tomato sauce, beef broth, oregano, basil, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for 30 minutes, stirring occasionally.
  5. Stir in cooked rice just before serving.
  6. Serve hot, garnished with fresh parsley if desired.

Notes

Use green, red, or yellow bell peppers for variety. Substitute ground turkey for a lighter version. Add extra broth if the soup thickens too much after sitting.
