Cream of Chicken and Gnocchi Soup

Ingredients
  

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 package (16 oz) potato gnocchi
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 cups fresh spinach (optional)

Method
 

  1. Heat olive oil in a large pot over medium heat. Sauté onion, carrots, and celery until softened, about 5 minutes.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Stir in chicken broth, chicken, thyme, salt, and pepper. Bring to a boil.
  4. Add gnocchi and cook according to package directions, usually 3–5 minutes, until they float to the top.
  5. Reduce heat and stir in heavy cream. Simmer for 5 minutes.
  6. Stir in spinach just before serving, if using. Adjust seasoning to taste.

Notes

Use rotisserie chicken for convenience. Fresh spinach can be added at the end for extra nutrition and color. Serve with crusty bread for dipping.
