Ingredients
  

  • 6 slices bacon, chopped
  • 1 large onion, diced
  • 2 stalks celery, diced
  • 3 large russet potatoes, diced
  • 4 cups corn kernels
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 3 sprigs fresh thyme
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Cook bacon until crispy and set aside.
  2. Sauté onion and celery in bacon fat.
  3. Add potatoes, broth, corn, and thyme and simmer.
  4. Mash some potatoes to thicken.
  5. Add cream, season, and heat gently.
  6. Top with bacon and serve.

Notes

Mash potatoes to thicken naturally. Do not boil after adding cream. Freezing not recommended.
