Method
- Roast garlic at 400°F for 45 minutes.
- Sauté onions and potatoes in butter.
- Add roasted garlic and broth with thyme.
- Simmer 20 minutes until potatoes are tender.
- Blend smooth, add cream, season, and serve.
Notes
Use Yukon Golds for creaminess. Can be made vegan with coconut milk. Tastes even better next day.
