Ingredients
  

  • 3 whole heads garlic
  • 4 medium potatoes, cubed
  • 1 large onion, diced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 3 tbsp butter
  • 4 sprigs fresh thyme
  • 3 tbsp olive oil

Method
 

  1. Roast garlic at 400°F for 45 minutes.
  2. Sauté onions and potatoes in butter.
  3. Add roasted garlic and broth with thyme.
  4. Simmer 20 minutes until potatoes are tender.
  5. Blend smooth, add cream, season, and serve.

Notes

Use Yukon Golds for creaminess. Can be made vegan with coconut milk. Tastes even better next day.
