Ingredients

  • 4 pork chops, about 1 inch thick
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 3/4 cup panko breadcrumbs
  • 1/2 cup freshly grated parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil, for drizzling

Equipment

  • baking sheet
  • wire rack (optional)
  • mixing bowls
  • meat thermometer

Method

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or place a wire rack on top.
  2. Set up three bowls: one with flour, one with beaten eggs, and one with breadcrumbs, parmesan, garlic powder, Italian seasoning, paprika, salt, and pepper mixed together.
  3. Pat pork chops dry. Dredge each chop in flour, then dip into egg, and press firmly into the parmesan breadcrumb mixture.
  4. Place coated pork chops on the prepared baking sheet and drizzle lightly with olive oil.
  5. Bake for 20–25 minutes until the coating is golden brown and the internal temperature reaches 145°F.
  6. Remove from oven and let rest for 5 minutes before serving.

Notes

For maximum crispiness, use freshly grated parmesan and bake the chops on a wire rack set over a baking sheet. Let rest 5 minutes before serving to keep juices locked in.
