Equipment

  • baking sheet
  • wire rack (optional)
  • mixing bowls
  • meat thermometer

Ingredients

  • 4 pork chops, about 1 inch thick
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 3/4 cup panko breadcrumbs
  • 1/2 cup freshly grated parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil, for drizzling

Instructions

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or place a wire rack on top.
  • Set up three bowls: one with flour, one with beaten eggs, and one with breadcrumbs, parmesan, garlic powder, Italian seasoning, paprika, salt, and pepper mixed together.
  • Pat pork chops dry. Dredge each chop in flour, then dip into egg, and press firmly into the parmesan breadcrumb mixture.
  • Place coated pork chops on the prepared baking sheet and drizzle lightly with olive oil.
  • Bake for 20–25 minutes until the coating is golden brown and the internal temperature reaches 145°F.
  • Remove from oven and let rest for 5 minutes before serving.

Notes

For maximum crispiness, use freshly grated parmesan and bake the chops on a wire rack set over a baking sheet. Let rest 5 minutes before serving to keep juices locked in.
