- Preheat oven to 450°F (230°C) and line a baking sheet with parchment paper.
- Whisk together flour, water, garlic powder, onion powder, smoked paprika, salt, and pepper until smooth.
- Toss cauliflower florets in the batter until evenly coated.
- Arrange cauliflower in a single layer on the baking sheet and bake for 20 minutes.
- Mix buffalo sauce with melted butter. Toss baked cauliflower in the sauce until well coated.
- Return cauliflower to the oven and bake another 15–20 minutes until crispy and caramelized.
- Serve hot with ranch or blue cheese dressing.
