Ingredients
  

  • 1 large head cauliflower, cut into florets
  • 0.75 cup all-purpose flour
  • 0.75 cup water or milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp smoked paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.75 cup buffalo sauce
  • 2 tbsp butter, melted
  • ranch or blue cheese dressing, for serving

Method
 

  1. Preheat oven to 450°F (230°C) and line a baking sheet with parchment paper.
  2. Whisk together flour, water, garlic powder, onion powder, smoked paprika, salt, and pepper until smooth.
  3. Toss cauliflower florets in the batter until evenly coated.
  4. Arrange cauliflower in a single layer on the baking sheet and bake for 20 minutes.
  5. Mix buffalo sauce with melted butter. Toss baked cauliflower in the sauce until well coated.
  6. Return cauliflower to the oven and bake another 15–20 minutes until crispy and caramelized.
  7. Serve hot with ranch or blue cheese dressing.

Notes

Serve immediately for maximum crispiness. Reheat leftovers in a hot oven to restore crunch.
