Ingredients

  • 2 lbs boneless skinless chicken breasts
  • 2 cups chicken broth
  • 0.5 cup low-sodium soy sauce
  • 0.25 cup hoisin sauce
  • 0.25 cup honey
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 cups carrots, julienned
  • 2 cups bell peppers, sliced
  • 1 cup snow peas
  • 1 package (16 oz) lo mein noodles (or spaghetti)
  • 2 tbsp sesame oil
  • 2 tbsp cornstarch (optional, for thickening)
  • 2 tbsp water (if using cornstarch slurry)
  • 2 tbsp green onions, chopped (for garnish)

Instructions

  • Place chicken breasts in the crockpot.
  • In a bowl, whisk together chicken broth, soy sauce, hoisin sauce, honey, garlic, and ginger. Pour over the chicken.
  • Cover and cook on low for 4 hours until chicken is cooked through and tender.
  • Shred chicken with two forks directly in the crockpot.
  • Add carrots, bell peppers, and snow peas. Stir well.
  • Meanwhile, cook lo mein noodles according to package directions. Drain and toss with sesame oil.
  • Add noodles to the crockpot and stir to combine. Cook for an additional 10 minutes on low.
  • Optional: If sauce is too thin, make a slurry with cornstarch and water, stir in, and cook for 5 minutes to thicken.
  • Garnish with green onions and serve warm.

Notes

Use boneless chicken breasts or thighs. Add extra vegetables like broccoli, mushrooms, or snap peas for variety. Lo mein noodles can be swapped for spaghetti or rice noodles. Garnish with sesame seeds or green onions before serving.
