Ingredients

  • 1 cup packed light brown sugar
  • 1/2 cup canola oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 cup unsweetened applesauce
  • 3/4 cup quick oats
  • 3/4 cup all-purpose flour
  • 1/3 cup packed light brown sugar
  • 5 tbsp unsalted butter, melted
  • 1/2 tsp ground cinnamon

Instructions

  • Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish with non-stick cooking spray.
  • In a large mixing bowl, beat together the brown sugar, canola oil, eggs, and vanilla extract until smooth.
  • Add the flour, baking soda, cinnamon, and nutmeg. Mix until just combined, being careful not to overmix.
  • Add the applesauce and mix until fully incorporated. Scrape the sides of the bowl and mix again if needed.
  • Spread the batter evenly into the prepared baking dish.
  • In a medium bowl, combine the oats, flour, brown sugar, melted butter, and cinnamon until evenly moistened. Use your hands if needed to form crumbs.
  • Sprinkle the crumb topping evenly over the cake batter.
  • Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean. Cool slightly before serving.

Notes

Add chopped walnuts or pecans to the crumb topping for extra crunch. Stir 1/2 cup raisins into the batter if desired. Dust the cooled cake with powdered sugar before serving. Store covered at room temperature for up to 5 days or refrigerate and warm individual slices for about 15 seconds in the microwave. Freeze individual slices wrapped tightly in plastic wrap and stored in a freezer-safe container.
