Ingredients
  

  • 1.5 lbs ground turkey (93/7 lean)
  • 2 tbsp vegetable oil
  • 3 cups broccoli florets
  • 2 medium carrots, julienned or thinly sliced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1/4 cup low-sodium soy sauce
  • 3 tbsp honey
  • 2 tbsp water
  • 1 tbsp cornstarch
  • 1 tsp sesame oil
  • sesame seeds and green onions, for garnish

Method
 

  1. Whisk soy sauce, honey, water, cornstarch, and sesame oil together in a small bowl. Set aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Add ground turkey and cook 5–6 minutes, breaking it up, until browned and cooked through.
  3. Add broccoli, carrots, and bell pepper. Stir fry for 3–4 minutes until vegetables are tender-crisp.
  4. Add garlic and ginger and cook for 30 seconds until fragrant.
  5. Pour teriyaki sauce into the skillet and toss to coat. Cook 1–2 minutes until sauce thickens and becomes glossy.
  6. Remove from heat, garnish with sesame seeds and green onions, and serve immediately.

Notes

Prep all ingredients before cooking since stir-frying moves quickly. Make sure the cornstarch is fully dissolved in the cold sauce to prevent lumps. Frozen vegetables can be used but may need an extra minute to release moisture. Leftovers store well for up to 4 days.
