Eyeball Pasta Salad

A creepy and fun Halloween pasta salad made with mozzarella eyeballs, olives, and colorful vegetables — a perfect spooky party side dish!

Ingredients
  

  • 12 oz pasta (rotini or fusilli)
  • 2 cups cherry tomatoes, halved
  • 1 cup black olives, sliced
  • 1 cup green bell pepper, diced
  • 1 cup yellow bell pepper, diced
  • 1/2 cup red onion, diced
  • 1 cup Italian dressing
  • 16 small balls fresh mozzarella (ciliegine)
  • 8 black olives, halved (for eyeball pupils)

Equipment

  • colander
  • large mixing bowl
  • cutting board
  • knife
  • spoon for mixing

Method
 

  1. Cook pasta according to package instructions. Drain and rinse under cold water to cool.
  2. In a large bowl, combine pasta, cherry tomatoes, sliced olives, bell peppers, and red onion. Toss with Italian dressing until well coated.
  3. Prepare the mozzarella eyeballs by cutting a small slit in each mozzarella ball and pressing in half of a black olive to resemble a pupil.
  4. Arrange the mozzarella eyeballs on top of the salad before serving for a spooky Halloween effect.

Notes

Serve chilled for the best flavor and texture. You can prepare the salad up to a day ahead, but add the mozzarella eyeballs just before serving for the freshest look. Use green or black olives for variety.
