- Cook pasta according to package instructions. Drain and rinse under cold water to cool.
- In a large bowl, combine pasta, cherry tomatoes, sliced olives, bell peppers, and red onion. Toss with Italian dressing until well coated.
- Prepare the mozzarella eyeballs by cutting a small slit in each mozzarella ball and pressing in half of a black olive to resemble a pupil.
- Arrange the mozzarella eyeballs on top of the salad before serving for a spooky Halloween effect.
Notes
Serve chilled for the best flavor and texture. You can prepare the salad up to a day ahead, but add the mozzarella eyeballs just before serving for the freshest look. Use green or black olives for variety.
