Ingredients
  

  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 1/2 cup unsalted butter, softened (for filling)
  • 2 cups powdered sugar (for filling)
  • 1 tsp vanilla extract (for filling)
  • 2 tbsp milk or heavy cream (for filling)
  • few drops orange food coloring (for filling)
  • 1/4 cup Halloween sprinkles (optional)

Method
 

  1. Preheat oven to 350°F. Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, beat butter and sugar until light and fluffy. Mix in egg and vanilla.
  4. Alternate adding the dry mixture and buttermilk to the wet ingredients, mixing just until combined.
  5. Drop batter by rounded tablespoons onto baking sheets, spacing apart. Bake 10–12 minutes until set. Cool completely.
  6. For the filling: Beat butter until creamy. Gradually add powdered sugar, then vanilla, milk, and food coloring. Beat until fluffy.
  7. Spread filling on half of the cookies, top with the remaining cookies to make sandwiches. Roll edges in sprinkles if desired.

Notes

These whoopie pies can be made ahead and stored in the refrigerator for up to 5 days. Bring to room temperature before serving for the best texture. Decorate with Halloween sprinkles for extra festivity!
