Ingredients
  

  • 1.5 cups orzo pasta, uncooked
  • 1 English cucumber, diced
  • 1.5 cups cherry tomatoes, halved
  • 1 cup feta cheese, crumbled
  • 1 can chickpeas, drained
  • 0.25 cup red onion, diced
  • 0.25 cup fresh parsley, chopped

Method
 

  1. Cook orzo until al dente and cool.
  2. Prepare vegetables and herbs.
  3. Whisk dressing ingredients.
  4. Combine all ingredients and chill before serving.
