Ingredients
  

  • 2 tbsp olive oil
  • 1 large onion, diced
  • 3 bell peppers, chopped
  • 3 cloves garlic, minced
  • 1 cup lentils, rinsed
  • 28 oz crushed tomatoes
  • 6 cups vegetable broth
  • 2 cups cooked rice
  • 2 tsp paprika
  • 1 tsp oregano
  • 1 tsp cumin
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Sauté onions and bell peppers until softened.
  2. Add garlic and cook briefly.
  3. Add lentils, tomatoes, broth, and spices. Simmer until lentils are tender.
  4. Stir in cooked rice and simmer.
  5. Adjust seasoning and serve.

Notes

Cook rice separately for best texture. Freeze without rice for best results.
