- Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it up as it cooks.
- Add onion, bell pepper, and garlic. Cook until softened, about 5 minutes.
- Stir in diced tomatoes, tomato sauce, kidney beans, and beef broth.
- Add chili powder, cumin, paprika, cayenne (if using), salt, and black pepper. Stir well to combine.
- Bring to a boil, then reduce heat and simmer uncovered for 45 minutes to 1 hour, stirring occasionally, until thickened.
- Taste and adjust seasoning as needed. Serve hot with desired toppings.
Notes
Adjust the spice level with more or less chili powder and cayenne. Serve with cornbread, sour cream, shredded cheese, or chopped green onions for a classic pairing.
