- 1 cup bulgur wheat or quinoa
- 2 cups water or vegetable broth
- 1 can chickpeas (15 oz), drained
- 1 large cucumber, diced
- 0.25 cup red onion, diced
- 1 cup fresh parsley, chopped
- 0.5 cup fresh mint, chopped
- 0.5 cup crumbled feta cheese
- 0.33 cup pistachios, chopped
- 3 tbsp olive oil
- 2 tbsp lemon juice
Cook grain and let cool.
Chop vegetables and herbs.
Combine all ingredients in a bowl.
Whisk olive oil and lemon juice.
Toss salad and season to taste.
