Ingredients
  

  • 2 lbs ground beef
  • 2 large yellow onions, sliced
  • 2 tbsp butter
  • 0.5 cup almond flour
  • 2 large eggs
  • 0.25 cup beef broth
  • 1.5 cups Gruyere cheese

Equipment

  • loaf pan or baking sheet

Method
 

  1. Slowly caramelize onions in butter and cool.
  2. Mix meatloaf ingredients gently.
  3. Shape into loaf and bake.
  4. Top with onions and cheese and broil.
  5. Rest before slicing and serving.

Notes

Cool onions before mixing. Do not overmix meat. Rest before slicing. Freezes well.
