Ingredients

  • 2 lbs ground beef
  • 2 large yellow onions, sliced
  • 2 tbsp butter
  • 0.5 cup almond flour
  • 2 large eggs
  • 0.25 cup beef broth
  • 1.5 cups Gruyere cheese

Instructions

  • Slowly caramelize onions in butter and cool.
  • Mix meatloaf ingredients gently.
  • Shape into loaf and bake.
  • Top with onions and cheese and broil.
  • Rest before slicing and serving.

Notes

Cool onions before mixing. Do not overmix meat. Rest before slicing. Freezes well.
