Ingredients

  • 3 cups raw unsalted almonds
  • 2 tbsp fresh lemon juice
  • 1.5 tsp lemon zest
  • 1 tbsp extra virgin olive oil
  • 1 tbsp honey (optional)
  • 1 tsp garlic powder (optional)
  • 0.5 tsp fine sea salt

Instructions

  • Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, whisk together the fresh lemon juice, lemon zest, olive oil, salt, honey (if using), and garlic powder (if using) until well combined.
  • Add the raw almonds and toss until every almond is evenly coated in the lemon mixture.
  • Allow the almonds to sit in the marinade for 5 to 10 minutes so the flavors can absorb.
  • Spread the almonds onto the prepared baking sheet in a single layer with space between each almond.
  • Roast for 20 to 25 minutes, stirring halfway through, until the almonds are golden and fragrant.
  • Immediately sprinkle additional lemon zest over the warm almonds if desired.
  • Cool completely on the baking sheet for at least 20 minutes to allow the almonds to crisp fully.
  • Transfer to an airtight container and store at room temperature for up to 1 week.

Notes

For extra intense lemon flavor, use the juice and zest of 2 lemons. For a sweeter version, add honey. For a savory twist, add garlic powder. Allow the almonds to cool completely before storing to maintain maximum crunch.
