Ingredients
  

  • 0.5 cup rolled oats
  • 0.5 cup milk of choice
  • 0.25 cup Greek yogurt
  • 0.5 cup fresh or frozen blueberries
  • 1 tbsp chia seeds
  • 1 tbsp honey or maple syrup
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 0.5 tsp vanilla extract

Method
 

  1. In a jar or bowl, combine rolled oats, milk, Greek yogurt, chia seeds, and vanilla extract. Stir until well mixed.
  2. Stir in lemon juice, lemon zest, and honey or maple syrup until evenly distributed.
  3. Gently fold in half of the blueberries, reserving the rest for topping.
  4. Cover and refrigerate for at least 4 hours or overnight until oats are soft and creamy.
  5. Stir well, top with remaining blueberries and extra lemon zest if desired, and enjoy.

Notes

Fresh lemon zest is key for bold citrus flavor. Adjust sweetness to taste, especially if using tart lemons or frozen blueberries.
