Ingredients

  • 0.5 cup rolled oats
  • 0.5 cup milk of choice
  • 0.25 cup Greek yogurt
  • 0.5 cup fresh or frozen blueberries
  • 1 tbsp chia seeds
  • 1 tbsp honey or maple syrup
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 0.5 tsp vanilla extract

Instructions

  • In a jar or bowl, combine rolled oats, milk, Greek yogurt, chia seeds, and vanilla extract. Stir until well mixed.
  • Stir in lemon juice, lemon zest, and honey or maple syrup until evenly distributed.
  • Gently fold in half of the blueberries, reserving the rest for topping.
  • Cover and refrigerate for at least 4 hours or overnight until oats are soft and creamy.
  • Stir well, top with remaining blueberries and extra lemon zest if desired, and enjoy.
