Ingredients

  • 1 tbsp lemon zest (reserved for coating)
  • 1 tbsp mandarin orange zest (reserved for coating)
  • 12 Medjool dates, pitted
  • 1 tbsp fresh lemon juice
  • 1/2 cup walnuts
  • 1/2 cup cashews
  • 2 tbsp chia seeds
  • 1/4 cup rolled oats
  • 2 tbsp candied ginger, chopped
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cardamom
  • 1 tsp olive oil
  • 1 tbsp additional lemon zest
  • 1 tbsp additional mandarin orange zest

Instructions

  • In a small bowl, combine 1 tablespoon lemon zest and 1 tablespoon mandarin orange zest. Set aside for coating the finished bites.
  • Add the pitted Medjool dates, lemon juice, walnuts, cashews, chia seeds, oats, candied ginger, ground ginger, cardamom, olive oil, and remaining lemon and mandarin zest to a food processor.
  • Pulse 10 to 15 times in short bursts until the mixture becomes sticky and holds together when pressed. Scrape down the sides as needed.
  • Check the consistency. If too dry, add another date or a teaspoon of lemon juice. If too sticky, add 1 to 2 tablespoons of oats and pulse again.
  • Use a small cookie scoop to portion the mixture. Lightly oil your hands and roll each portion into a smooth ball.
  • Place the bites on a parchment-lined tray and sprinkle with the reserved citrus zest mixture. Gently shake the tray so the bites become coated.
  • Serve immediately or refrigerate for up to 1 week. Freeze for up to 3 months if desired.

Notes

For extra anti-inflammatory benefits, add a pinch of turmeric and black pepper. If the mixture is too dry, add an extra Medjool date or a teaspoon of lemon juice. If too sticky, add 1 to 2 tablespoons of oats. Store in the refrigerator for up to 1 week or freeze for up to 3 months. These bites can be enjoyed straight from the freezer.
