Ingredients
  

  • 2 lbs ground beef (85/15 or 90/10)
  • 1 packet (1 oz) Lipton onion soup mix
  • 2 eggs
  • ¾ cup milk
  • ½ cup ketchup (plus more for topping)
  • ¾ cup plain breadcrumbs
  • fresh parsley, chopped (optional garnish)

Method
 

  1. Preheat oven to 350°F. Lightly grease or line a loaf pan.
  2. In a large bowl, combine ground beef, onion soup mix, eggs, milk, ketchup, and breadcrumbs. Mix until just combined — don’t overwork.
  3. Transfer mixture to loaf pan and shape evenly. Spread additional ketchup over the top if desired.
  4. Bake for 50–55 minutes, or until internal temperature reaches 160°F.
  5. Let rest 10 minutes before slicing. Garnish with parsley and serve.

Notes

Let meatloaf rest for 10 minutes before slicing for clean cuts. Serve with mashed potatoes, green beans, or a side salad. Leftovers make great sandwiches the next day!
