Marshmallow Rice Krispies

These spooky no-bake treats combine marshmallows, Rice Bubbles cereal, and food coloring to create brain-shaped Halloween desserts that are fun for kids and parties.

Ingredients
  

  • 85 g unsalted butter
  • 6 cups regular marshmallows
  • 6 cups Rice Bubbles (or Rice Krispies cereal)
  • 2–3 drops red food coloring
  • 2–3 drops pink food coloring

Equipment

  • large heatproof bowl
  • spoon or spatula
  • parchment paper
  • baking tray

Method
 

  1. Prepare a Bain-Marie by boiling 1/2 cup water in a small pot. Place a large heatproof bowl on top, ensuring it doesn’t touch the water.
  2. Add butter and marshmallows to the heatproof bowl. Stir until completely melted and smooth.
  3. Add Rice Bubbles cereal and stir until evenly coated with marshmallow mixture.
  4. Mix in red and pink food coloring until desired brain-like shade is achieved.
  5. With greased hands, shape mixture into brain shapes and place on parchment-lined tray to set.

Notes

Best eaten the day they are made for maximum chewiness. Store in an airtight container for up to 2 days. Grease hands lightly with butter or oil to make shaping easier.
