Ingredients
  

  • 1.5 lbs ground beef
  • 0.5 cup breadcrumbs
  • 1 large egg
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 medium carrots, sliced
  • 2 stalks celery, diced
  • 3 medium potatoes, cubed
  • 4 cups beef broth
  • 1 cup frozen peas

Equipment

  • Dutch oven

Method
 

  1. Mix meatball ingredients and form meatballs.
  2. Brown meatballs and remove.
  3. Sauté vegetables in same pot.
  4. Add broth, potatoes, and return meatballs.
  5. Add peas, adjust seasoning, and serve.

Notes

Do not overmix meatballs. Brown first for flavor. Can be adapted for slow cooker.
