Ingredients

  • 1.5 lbs ground beef
  • 0.5 cup breadcrumbs
  • 1 large egg
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 medium carrots, sliced
  • 2 stalks celery, diced
  • 3 medium potatoes, cubed
  • 4 cups beef broth
  • 1 cup frozen peas

Instructions

  • Mix meatball ingredients and form meatballs.
  • Brown meatballs and remove.
  • Sauté vegetables in same pot.
  • Add broth, potatoes, and return meatballs.
  • Add peas, adjust seasoning, and serve.

Notes

Do not overmix meatballs. Brown first for flavor. Can be adapted for slow cooker.
