Monster Cookie Bars

Monster Cookie Bars pack peanut butter, oats, and M&Ms into one thick, chewy bar with no flour and no chilling required.

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup creamy peanut butter
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 3 cups old-fashioned rolled oats
  • 3/4 cup M&Ms, divided
  • 1/2 cup semisweet chocolate chips, divided

Instructions

  • Preheat the oven to 350°F (175°C) and line a 9x13-inch pan with parchment paper, leaving overhang on two sides.
  • Beat the butter, peanut butter, brown sugar and granulated sugar together until light and fluffy, about 2 minutes.
  • Beat in the eggs one at a time, then mix in the vanilla and baking soda.
  • Stir in the oats by hand until fully combined, then fold in half the M&Ms and half the chocolate chips.
  • Press the dough evenly into the prepared pan, then scatter the remaining M&Ms and chocolate chips over the top, pressing gently so they stick.
  • Bake for 20-22 minutes, until the edges are golden and the center looks just set.
  • Cool completely in the pan, about 1 hour, before lifting out and cutting into 16 bars.

Notes

Store in an airtight container at room temperature for up to 5 days, or freeze individually wrapped bars for up to 3 months.
