Monster Cookie Bars
Monster Cookie Bars pack peanut butter, oats, and M&Ms into one thick, chewy bar with no flour and no chilling required.

Ingredients

unsalted butter, softened

creamy peanut butter

packed brown sugar

granulated sugar

large eggs

teaspoon
vanilla extract

teaspoon
baking soda

old-fashioned rolled oats

M&Ms, divided

cup
semisweet chocolate chips, divided
Instructions
Preheat
the oven to 350°F (175°C) and line a 9x13-inch pan with parchment paper, leaving overhang on two sides.
Beat
the butter, peanut butter, brown sugar and granulated sugar together until light and fluffy, about 2 minutes.
Beat
in the eggs one at a time, then mix in the vanilla and baking soda.
Stir
in the oats by hand until fully combined, then fold in half the M&Ms and half the chocolate chips.
Press
the dough evenly into the prepared pan, then scatter the remaining M&Ms and chocolate chips over the top, pressing gently so they stick.
Bake
for 20-22 minutes, until the edges are golden and the center looks just set.
Cool
completely in the pan, about 1 hour, before lifting out and cutting into 16 bars.
Notes
Store in an airtight container at room temperature for up to 5 days, or freeze individually wrapped bars for up to 3 months.
