Ingredients

  • 4 boneless skinless chicken thighs
  • 2 tbsp olive oil
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup BBQ sauce, divided
  • fresh chopped parsley or green onions, for garnish

Equipment

  • baking sheet
  • wire rack
  • mixing bowl
  • basting brush
  • meat thermometer

Method

  1. Whisk together olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Coat the chicken thighs fully and marinate 15–30 minutes (or up to 24 hours).
  2. Preheat oven to 400°F. Line a baking sheet with parchment or foil. Place a wire rack on top for best caramelization.
  3. Place thighs on the rack and brush generously with BBQ sauce on both sides.
  4. Bake 25–30 minutes. Halfway through, brush with a second coat of BBQ sauce for a sticky, caramelized glaze.
  5. Continue baking until internal temperature reaches 165°F. Let rest 5 minutes to lock in juices.
  6. Garnish with chopped parsley or green onions and serve with extra BBQ sauce.

Notes

For best results, marinate the chicken for at least 15 minutes—or up to 24 hours for deeper flavor. Using a wire rack promotes even cooking and helps the BBQ glaze caramelize without burning. Serve with mashed potatoes, coleslaw, corn on the cob, or roasted vegetables.
