Ingredients
- 36-48 small sugar or chocolate chip cookies
- 1.5 quarts vanilla ice cream, softened
- 1/2 cup freeze-dried strawberries or raspberries, crushed
- 1/2 cup freeze-dried blueberries, crushed
- 1/4 cup white nonpareils or shredded coconut
- 1/4 cup red, white, and blue sprinkles (optional)
Instructions
- Line baking sheets with parchment paper and chill in the freezer for 10 minutes.
- Let ice cream soften at room temperature for 5–8 minutes until spreadable.
- Arrange half of the cookies flat side up on a surface.
- Scoop about 2 tablespoons of ice cream onto each cookie.
- Top with remaining cookies and gently press to spread ice cream to edges.
- Place toppings in separate bowls and roll sandwich edges to coat.
- Transfer sandwiches to chilled baking sheets.
- Freeze for at least 2 hours until firm.
- Wrap individually and store in freezer until ready to serve.
