Ingredients
  

  • 36-48 small sugar or chocolate chip cookies
  • 1.5 quarts vanilla ice cream, softened
  • 1/2 cup freeze-dried strawberries or raspberries, crushed
  • 1/2 cup freeze-dried blueberries, crushed
  • 1/4 cup white nonpareils or shredded coconut
  • 1/4 cup red, white, and blue sprinkles (optional)

Method
 

  1. Line baking sheets with parchment paper and chill in the freezer for 10 minutes.
  2. Let ice cream soften at room temperature for 5–8 minutes until spreadable.
  3. Arrange half of the cookies flat side up on a surface.
  4. Scoop about 2 tablespoons of ice cream onto each cookie.
  5. Top with remaining cookies and gently press to spread ice cream to edges.
  6. Place toppings in separate bowls and roll sandwich edges to coat.
  7. Transfer sandwiches to chilled baking sheets.
  8. Freeze for at least 2 hours until firm.
  9. Wrap individually and store in freezer until ready to serve.
