Ingredients
  

  • 2 tbsp olive oil
  • 3-4 pound boneless pork loin
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 20 oz canned pineapple with chunks and juice
  • 1/2 cup low sodium soy sauce
  • 1/2 cup brown sugar
  • 6 cloves garlic, minced (or 1 tsp granulated garlic)
  • 2 tsp orange zest (optional)
  • sliced green onions, for garnish (optional)

Method
 

  1. Heat oil in a large skillet over medium-high heat.
  2. Season pork loin with salt and pepper, then sear 4–5 minutes per side until lightly browned.
  3. Place pork loin into the slow cooker, fat side up. Add pineapple chunks and juice around it.
  4. Add soy sauce, brown sugar, garlic, and orange zest, then cover.
  5. Cook on low for 6 hours or high for 3–4 hours until pork reaches 145°F and is tender.
  6. Remove pork and let rest 15 minutes before slicing, or shred directly in the slow cooker.
  7. Serve with optional green onions.

Notes

Searing the pork adds deeper flavor but is optional. Orange zest or orange juice can be substituted or omitted. Pork loin should cook low and slow until it shreds easily. Let rest before slicing for best texture.
