Ingredients

  • 6 slices thick bread (brioche or challah preferred)
  • 3 large eggs
  • 1/2 cup milk
  • 1/4 cup pumpkin puree
  • 2 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1 tbsp butter (for frying)

Instructions

  • In a shallow dish, whisk together eggs, milk, pumpkin puree, sugar, vanilla, and pumpkin pie spice until smooth.
  • Heat butter in a large skillet or griddle over medium heat.
  • Dip each bread slice into the pumpkin custard, coating both sides well.
  • Cook bread slices 2–3 minutes per side until golden brown and cooked through.
  • Serve warm with maple syrup, powdered sugar, or whipped cream.
