Ingredients
  

  • 6 slices thick bread (brioche or challah preferred)
  • 3 large eggs
  • 1/2 cup milk
  • 1/4 cup pumpkin puree
  • 2 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1 tbsp butter (for frying)

Method
 

  1. In a shallow dish, whisk together eggs, milk, pumpkin puree, sugar, vanilla, and pumpkin pie spice until smooth.
  2. Heat butter in a large skillet or griddle over medium heat.
  3. Dip each bread slice into the pumpkin custard, coating both sides well.
  4. Cook bread slices 2–3 minutes per side until golden brown and cooked through.
  5. Serve warm with maple syrup, powdered sugar, or whipped cream.

Notes

Serve warm with maple syrup, powdered sugar, or whipped cream. Leftovers can be stored in the refrigerator for up to 3 days and reheated in a skillet or toaster oven.
