Ingredients

  • 1/2 cup unsalted butter
  • 2 cups granulated sugar
  • 1/2 cup milk
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup pumpkin puree
  • 1/2 cup peanut butter
  • 2 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 3 cups quick oats

Instructions

  • In a medium saucepan over medium heat, melt the butter. Stir in sugar, milk, and cocoa powder. Bring to a boil and cook for 1 minute.
  • Remove from heat and stir in pumpkin puree, peanut butter, pumpkin pie spice, and vanilla until smooth.
  • Add oats and stir until fully combined.
  • Drop spoonfuls of the mixture onto wax paper and let set until firm, about 30 minutes.

Notes

These cookies set best when chilled for at least 30 minutes. Store in an airtight container in the refrigerator for up to 1 week, or freeze for up to 2 months.
