Ingredients
  

  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • purple food coloring as needed
  • 1 cup unsalted butter (for frosting)
  • 3 cups powdered sugar (for frosting)
  • 2 tbsp milk (for frosting)
  • 1 tsp vanilla extract (for frosting)
  • 24 candy eyes, for decoration

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add dry mixture to wet ingredients and mix until combined.
  5. Add purple food coloring until desired shade is reached. Scoop dough onto prepared baking sheets.
  6. Bake 10–12 minutes, until cookies are set. Let cool completely on a wire rack.
  7. For frosting: Beat butter until smooth. Gradually add powdered sugar, milk, and vanilla; beat until fluffy.
  8. Spread frosting on half the cookies and sandwich with remaining cookies. Decorate with candy eyes to create monster faces.

Notes

Store cookie sandwiches in an airtight container at room temperature for 2 days or refrigerate for up to 5 days.
