Method
- Preheat oven to 400°F and line a baking sheet.
- Dry chickpeas thoroughly and remove loose skins.
- Roast chickpeas plain for 15 minutes.
- Toss with oil and seasonings.
- Roast another 10–15 minutes until crunchy.
- Cool completely before serving.
Notes
Dry chickpeas thoroughly before roasting. Add herbs after the first roast to prevent burning. Best eaten within 1–2 days.
