Equipment

  • baking sheet
  • parchment paper
  • mixing bowl or stand mixer
  • Cookie scoop

Ingredients

  • 1 lb pork breakfast sausage (room temperature)
  • 2 cups Bisquick baking mix
  • 2 cups sharp cheddar cheese, freshly shredded
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 3 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1/4 tsp black pepper

Instructions

  • Preheat oven to 375°F. Line a baking sheet with parchment paper.
  • In a large bowl or stand mixer, combine uncooked sausage, Bisquick, and shredded cheese. Mix until a stiff dough forms.
  • Scoop tablespoon-sized portions and roll into smooth balls. Place onto baking sheet spaced 1 inch apart.
  • Bake for 20–25 minutes until golden brown and cooked through.
  • Whisk together mayonnaise, sour cream, lemon juice, lemon zest, and black pepper to make the sauce.
  • Serve warm sausage balls with cool lemon sauce.

Notes

Let the sausage sit at room temperature before mixing for easier blending. Always shred your cheese fresh from a block for better binding and texture. Avoid overmixing the dough to keep the sausage balls tender. Freeze uncooked sausage balls on a tray before bagging to bake later from frozen—just add a few extra minutes to the bake time. The lemon dipping sauce stores well in the fridge for up to five days.
