- Preheat oven to 375°F. Line a baking sheet with parchment paper.
- In a large bowl or stand mixer, combine uncooked sausage, Bisquick, and shredded cheese. Mix until a stiff dough forms.
- Scoop tablespoon-sized portions and roll into smooth balls. Place onto baking sheet spaced 1 inch apart.
- Bake for 20–25 minutes until golden brown and cooked through.
- Whisk together mayonnaise, sour cream, lemon juice, lemon zest, and black pepper to make the sauce.
- Serve warm sausage balls with cool lemon sauce.
Notes
Let the sausage sit at room temperature before mixing for easier blending. Always shred your cheese fresh from a block for better binding and texture. Avoid overmixing the dough to keep the sausage balls tender. Freeze uncooked sausage balls on a tray before bagging to bake later from frozen—just add a few extra minutes to the bake time. The lemon dipping sauce stores well in the fridge for up to five days.
