Sinigang (Filipino Tamarind Soup)

Sinigang is a classic Filipino sour soup made with tender pork, tamarind broth, and assorted vegetables. Its tangy, comforting flavor is perfect for rainy days or hearty family meals.

Ingredients
  

  • 2 lbs pork belly or ribs, cut into chunks
  • 8 cups water
  • 1 medium onion, quartered
  • 2 Roma tomatoes, quartered
  • 1 cup fresh tamarind pulp or 1 packet sinigang mix
  • 2 tbsp fish sauce, or to taste
  • 1 tbsp salt, or to taste
  • 1 tsp ground black pepper
  • 1 daikon radish, peeled and sliced
  • 1 eggplant, sliced
  • 1 cup long beans or green beans, trimmed
  • 1 green chili (optional)
  • 1 bunch mustard greens or bok choy

Equipment

  • strainer (if using fresh tamarind)

Method
 

  1. In a large pot, add pork, onion, tomatoes, and water. Bring to a boil and skim off foam. Lower heat and simmer for 45–60 minutes until pork is tender.
  2. Add tamarind pulp or sinigang mix. Stir in fish sauce, salt, and pepper. Simmer 10 minutes.
  3. Add daikon, eggplant, and green beans. Cook until vegetables are tender, about 10 minutes.
  4. Add mustard greens or bok choy and green chili (if using). Simmer another 2–3 minutes until wilted.
  5. Adjust seasoning if needed. Serve hot with steamed rice.

Notes

Use fresh or frozen tamarind pulp for depth of flavor, or sinigang seasoning packets in a pinch. Adjust the sourness with more or less tamarind. Serve hot with steamed jasmine rice.
