Ingredients
  

  • 14 sheets graham crackers
  • 6 tbsp unsalted butter, melted (for crust)
  • 2 tbsp granulated sugar (for crust)
  • 1 cup dark chocolate, chopped
  • 3/4 cup unsalted butter
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 egg yolk
  • 2 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/4 cup Dutch-process cocoa powder
  • 1/2 tsp salt
  • 20 large marshmallows

Method
 

  1. Preheat oven to 350°F and line a 9x13 inch pan with parchment paper.
  2. Crush graham crackers into fine crumbs and mix with melted butter and sugar.
  3. Press mixture firmly into pan and bake for 8 minutes, then set aside.
  4. Melt chocolate and butter together, stirring until smooth, then cool slightly.
  5. Whisk in sugar, then add eggs and yolk one at a time, followed by vanilla.
  6. Fold in flour, cocoa powder, and salt until just combined.
  7. Pour batter over crust and bake for 22–25 minutes until slightly fudgy in center.
  8. Top with marshmallows covering the surface completely.
  9. Broil on high for 60–90 seconds until marshmallows are golden brown.
  10. Cool completely before slicing into bars and serving.

Notes

Press the graham crust firmly to prevent crumbling. Do not overbake the brownies—center should remain slightly fudgy. Add marshmallows only after baking, then broil briefly while watching constantly. For clean slices, use a hot knife and wipe between cuts.
