Ingredients

  • 6 ripe but firm pears (about 2 1/2 pounds)
  • 1/3 cup granulated sugar
  • 1 tbsp lemon juice
  • 2 tbsp cornstarch
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1 cup all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 3/4 cup packed brown sugar
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1/4 tsp salt

Instructions

  • Preheat the oven to 375°F and lightly butter a 9-inch square or 2-quart baking dish.
  • Peel and core the pears, then slice them about 1/2 inch thick into a large bowl.
  • Toss the pears with the granulated sugar, lemon juice, cornstarch, cinnamon, ginger, and nutmeg until evenly coated, then spread the mixture into the prepared baking dish.
  • In another bowl, stir together the flour, rolled oats, brown sugar, and salt.
  • Pour in the melted butter and mix with a fork until the topping forms damp, clumpy crumbs.
  • Scatter the crumble evenly over the pears, leaving some larger clumps for extra texture.
  • Bake at 375°F for 40 to 45 minutes, until the topping is deep golden and the filling is bubbling around the edges.
  • Cool for at least 15 minutes before serving warm so the juices have time to thicken.

Notes

Store covered in the refrigerator for up to 4 days. Reheat in a 350°F oven for about 15 minutes to crisp the topping. The crumble can be assembled and refrigerated up to 1 day before baking.
