This easy St. Patrick’s Day Puppy Chow is a crunchy, no-bake treat made with Rice Chex coated in white chocolate and green candy melts, tossed in powdered sugar, and mixed with Lucky Charms marshmallows and rainbow sprinkles. Ingredients
  

  • 9 cups Rice Chex cereal
  • 1 1/2 cups white chocolate chips
  • 1/2 cup green candy melts
  • 4 tbsp unsalted butter
  • 2 cups powdered sugar
  • 1 cup Lucky Charms marshmallows
  • 1/4 cup rainbow sprinkles
  • 1 tsp vanilla extract (optional)
  • 1/2 cup mini chocolate chips or green M&Ms (optional)
  • 1/2 cup gold chocolate coins, chopped (optional)

Method
 

  1. Measure Rice Chex cereal into a very large mixing bowl and set aside.
  2. In a microwave-safe bowl, combine white chocolate chips, green candy melts, and butter. Microwave at 50% power in 30-second intervals, stirring between each, until smooth.
  3. Stir in vanilla extract if using.
  4. Pour melted chocolate mixture over cereal and gently toss until evenly coated.
  5. Transfer coated cereal to a large zip-top bag and add powdered sugar.
  6. Seal bag and shake vigorously until cereal is fully coated.
  7. Spread coated cereal onto a parchment-lined baking sheet to cool.
  8. While slightly tacky, sprinkle Lucky Charms marshmallows, rainbow sprinkles, and optional mix-ins over the puppy chow.
  9. Allow to cool completely for about 30 minutes, then break apart any clumps.
  10. Stir in chopped gold chocolate coins if using and transfer to serving bowl or storage container.

Notes

Shake vigorously to ensure every cereal piece is fully coated in powdered sugar. Spread coated cereal on a baking sheet to cool completely before storing to prevent clumping. Store in an airtight container at room temperature up to 2 weeks. Avoid refrigerating unless necessary, as condensation can make the coating sticky.
