St. Patrick's Day Rice Krispie Bites

Ingredients
  

  • 6 cups Rice Krispies cereal
  • 10 oz marshmallows (about 40 large)
  • 3 tbsp butter
  • 1/2 tsp vanilla extract (optional)
  • green gel food coloring
  • 1/4 cup shamrock or green/gold sprinkles
  • 1/3 cup gold candy melts (optional drizzle)

  • wooden spoon or spatula

Method
 

  1. Line a 9x13-inch pan with parchment paper and lightly grease it.
  2. Measure 6 cups of Rice Krispies cereal into a large bowl and set aside.
  3. Melt butter in a large pot over low heat.
  4. Add marshmallows and stir constantly until completely melted and smooth.
  5. Remove from heat and stir in vanilla extract if using.
  6. Add green gel food coloring gradually, stirring until desired shade is reached.
  7. Fold in Rice Krispies cereal until evenly coated.
  8. Press mixture gently and evenly into prepared pan without compacting too firmly.
  9. Immediately sprinkle shamrock or green and gold sprinkles over the top and press lightly to adhere.
  10. Allow to cool at room temperature for about 30 minutes until fully set.
  11. Lift from pan using parchment overhang and cut into squares.
  12. If desired, melt gold candy melts and drizzle decoratively over cut squares. Let set before serving.

Notes

Use gel food coloring for vibrant color without adding excess moisture. Do not overheat marshmallows or press mixture too firmly into the pan to keep treats soft and chewy. Store in an airtight container at room temperature up to 3 days. Avoid refrigeration unless necessary. Freeze up to 6 weeks if tightly wrapped.
